The chip wood acts like a reactive and the orange tree firewood as fuel to achieve a constant and strong fire.
The chip wood is used at the start to light the paella and at the end of the cooking process to achieve that desired ‘Socarrat’ (crispy rice).
If you want to give a master’s touch to your paella, add one or a few sprigs of fresh Rosemary when it’s just finishing up and let it sit.
